Cave Wines, founded in 2023 by winemaker Justin Folloso and partner Rosario, is a boutique Tasmanian winery focused on producing fresh, terroir-driven wines that reflect the raw beauty of the island. Drawing on experience from international wineries, Folloso emphasizes integrity and minimal intervention, crafting small-batch wines that capture the essence of their vineyard sites. Early releases include Pinot Noir and Sauvignon Blanc from the Coal River Valley, and a Chardonnay from Pipers River, all showcasing the clarity and expression of Tasmania’s cool-climate regions.
The winery’s approach includes wild ferments, basket pressing, barrel or lees aging, and often bottling unfined and unfiltered, preserving aromatic purity and structure.
