This 100% Chardonnay Sparkling is complex with a richness of flavour that isn't achievable in younger wines with subtle fruit characters of white peaches, but it is the secondary characters that make this wine shine with expressive yeasty, bready characters, roasted nuts, fino sherry, oyster shells and truffles. It's ultra complex, which finishes with a lingering dry finish, that has a structured influence of quince as well. It's made for a food match of natural oysters, Lobster Thermadore or aged soft cheeses.

About This Cleanskin
This is an exceptional wine that is being sold as a cleankin, because the owner is trying to generate some additional funds. This Sparkling is a 2010 Blanc de Blanc from a single vineyard in southern Tasmania, it has spent an incredible 12 years on Lees, and it normally sells for $100 per bottle.
I can't tell you too much more about it, other than the wine was disgorged by Ed Carr (but not originally made by him) and has a dosage of 2g. It is not Arras, but the vineyard has been supplying fruit to Ed Carr, that has been blended into Arras.
