Future Perfect Carbonique 2025

Sale Price: $32.95 Original Price: $36.00
100% Pinot Noir from Kinvarra Vineyard in the town of Plenty.  Different approach to Pinot Noir here. A small parcel of fruit was left out  an extra 2 weeks to allow for the stems to fully ripen and lignify, in an effort to avoid any green notes in the finished wine. 1.2t of hand picked fruit was transferred to a CO2 saturated tank and sealed for 4 weeks of carbonic maceration. Basket pressed to tank to finish ferment and mature for 4 months prior to bottling. High toned estery notes from the carbonic fermentation, grape flavoured hubba bubba (in the best possible way), supple purple fruits and strawberry fool framed by woodsy tannins. Light to medium bodied on the palate, with enough sass to keep things interesting.

About Future Perfect Wines

Future Perfect is a boutique Tasmanian winery producing small‑batch, terroir‑driven wines from carefully selected vineyard parcels in regions like the Derwent Valley and Coal River. Operating from a converted facility in Goodwood, Hobart, the winery uses modest equipment — barrels, a basket press, and tanks — giving their wines a handcrafted, artisanal quality. Founded by Thomas New, the label focuses on cool‑climate expressions rather than warmer regions, with an emphasis on purity, freshness, and sense of place.

The portfolio includes Chardonnay, Pinot Noir, Riesling, and occasional blends, often bottled unfined and unfiltered to preserve vibrancy. Future Perfect wines are known for their clarity and energy — Chardonnays with bright citrus and stone‑fruit notes, Pinot Noirs with delicate red fruits and subtle spice — making them elegant and food‑friendly, particularly with dishes like duck, lamb, or fresh, seasonal fare.
